A easy and satisfying one pot dish. Made with organic chicken, potatoes, onions, salt, pepper and tomatoes and fresh oregano. I also added courgettes and sliced organic carrots for extra veggies and fibre.
How to make
Chop and place all ingredients into a oven dish with a good glug of olive oil and bake in the oven for about an hour at 170F or until the liquid had reduced. Serve with optional sprigs of flat leaf parsley, mixed salad and/or slices of sourdough. Stir half way through.
6 medium cyprus potatoes or baking potatoes
2 medium onions
8 good quality chicken breasts or lamb cutlets/chops
3 cloves garlic
2 400g chopped tomatoes
Salt and pepper to taste
1 medium courgette
2 medium carrots
