Cod, tomato and olive bake

Easy one pot dish which is simple to prepare, tasty and nutritious.

How to make
1) Preheat oven to 180c/350F/Gas Mark 4
2) Wash and slice the potatoes. Place into a baking dish along with the chopped onion
3) Pour over the vegetable stock, add salt and pepper
4) Bake for 15 mins
5) Cut the cod into large pieces
6) Remove dish from oven and add the fish, olives, tomatoes. Squeeze over lemon juice and add the olive oil, season to taste
7) Cook for another 15 mins adding a little water if needed. Sprinkle over the parsley and serve

700g new potatoes
1 onion, chopped
3 medium cod fillets
450g cherry tomatoes
100g black pitted olives
Glug olive oil
Juice of 1 lemon
handful of fresh flat leaf parsley, torn or chopped
150ml vegetable stock
salt & pepper to taste
